  Apple Crisp Parfait
  Filling
  • 3 cups sliced and peeled apples (about 3 medium apples)
  • 1/3 cup of oats (preferably Cambridge Super Oats)
  • 3 Tbsp. brown sugar (or the equivalent in artificial sweetener)
  • 2 Tbsp. water
  • 1 tsp. cinnamon
Topping
  • 4 oz. nonfat vanilla yogurt (sweetened with artificial sweetener)
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 3/4 cup light whipped topping

Mix apples with oats, brown sugar, water and cinnamon. Place apples in a 1-quart microwave-safe bowl. Cover with wax paper and microwave on high for 5 to 7 minutes, rotating ¼ turn halfway through cooking time. (Cooking time may be longer - depending on the thickness of the fruit.)

Topping: Mix yogurt with seasonings. Fold whipped topping into yogurt. Serve a dollop of topping over hot or chilled apple crisp.

SERVES 4. Per serving: 167 calories and 2 grams of fat.
