Low Fat Recipes
  Gingerbread Cookies
  Ingredients:
  • 1/3 cup margarine
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 2¼ cups all-purpose flour
  • 1 egg (or egg substitute)
  • 1 tsp. cinnamon
  • 1 tsp. dry ground ginger
  • 1/2 tsp. ground cloves
  • 1 tsp. baking soda

In a mixing bowl, cream margarine with an electric mixer. Add the sugar, molasses, 1 cup of the flour, egg, seasonings, and baking soda. Beat until well blended. Blend in remaining flour.

Shape into 1-inch balls. Bake 2 inches apart on ungreased cookie sheets at 375 degrees for about 8 minutes. Cool on a wire rack.

MAKES 48 COOKIES. Per cookie: 48 calories and 1.5 grams of fat.
